Spicy Sweet Potato Hummus

When it comes to potatoes, a sweet potato is by far my favourite. It is such a versatile veg that can be cooked in many ways, mashed, wedges,chips, crisps. 
And when it comes to a quick snack i love nothing more than a bagel and hummus!

I recently got a food processor and decided to try making my own hummus, combining sweet potato into the mix.

Please see below for the recipe, please note the spices were added to taste (i like alot of heat) so if you don't like alot of heat add gradually to your own taste.






Ingredients

  • 2 medium sweet potatoes
  • 3 tablespoons olive oil
  • 1 can of chickpeas (rinsed and drained)
  • 1 garlic clove (peeled)
  • juice of half a lemon
  • zest of half a lemon
  • a pinch of sea salt
  • 2 teaspoons cayenne pepper 
  • 1 teaspoon smoked paprika
  • half a teaspoon cumin
Instructions

  1. Preheat oven to 180 degrees. Lace the sweet potatoes on a tray and bake Bake in the oven for 30-45 minutes. when they’re done baking they should be crispy on the outside and the skin will have parted from the potato.
  2. While the sweet potatoes are cooling, pop all the other ingredients into a food processor. (Remember and add the spices a bit at a time and taste before adding more)Once the sweet potatoes have cooled enough to handle, use your fingers to peel the skin off of them. Once this is done pop them in the food processor along with the rest of ingredients.
  3. Blend well, and serve! (it is at this point you can taste and add more spices if required)

This recipe does make a whole lot of hummus, but if like me you can't get enough it won't last long! 

It can be served with tortillas, toasted pitta bread,bagel or even on a wrap with your favourite veggies!
